In 2004, Mireille Guiliano told us that French women don't get fat. Now, in "Why the Chinese Don't Count Calories: 15 Secrets From a 3,000-Year-Old Food Culture" (Skyhorse Publishing), Lorraine Clissold, who lived in China for 10 years, has written a book on how the Chinese stay healthy while eating regularly and in hearty quantities. There's no silver bullet here. Clissold says the first secret is to think about food as nourishment, rather than having a diet mentality and approaching food with trepidation. Others include: eat until full, avoid processed foods and think of vegetables as main dishes. And that sticky-sweet mountain of orange chicken from the takeout place down the street? Not a staple of true Chinese cuisine.
