BEHIND BARS

The newest flavor from Stoli Vodka is Blakberi. Five area restaurants were asked to design a premium drink recipe that not only showcased the restaurant's bartending talent, but also made a delicious cocktail. Carolina's, 10 Exchange St., designed the Blakberi Basil Mojito. The recipe goes something like this: A jigger of 1.5 ounces Stoli Blakberi and 2.5 ounces simple syrup (which is two parts sugar and one part water). The Carolina's staff prepares it like this. Bring the water to a boil. Dissolve the sugar into the boiling water. Once the sugar is dissolved completely, remove the pan from the heat, then allow the mix to cool completely. Add a dash fresh squeezed lemon juice, dash sour mix, two to three basil leaves, crushed ice and soda water. Put the simple syrup, lemon juice and basil into glass and muddle. Add crushed ice, sour mix, Stoli Blakberi and top off with some soda. Ethan at Tristan Restaurant, 55 South Market St., took a very different approach with the new Blakberi vodka, creating a dessert cocktail he calls "Blackberry Cobbler." The recipe contains one ounce of Stoli Blacberi, 1/2 ounce Stoli Vanilla, 1/2 ounce Hiram Walker Butterscotch schnapps, 1/2 ounce half-and-half, three fresh blackberries, and a 1/2 ounce brown sugar vanilla syrup. Make it by muddling the blackberries with brown sugar vanilla syrup. Add the rest of the ingredients and shake. Strain into a brown sugar cinnamon rimmed martini glass. Create the brown sugar vanilla syrup by adding equal parts dark brown sugar and hot water and one teaspoon of vanilla extract. Stir until dissolved, and put in an ice bath until chilled.
